About the Author
James Beard had a national reputation as an authority on every phase of food. Consultant to a wine and spirits establishment, he wrote seventy-six other books and numerous articles for national magazines on widely varied phases of cooking. Mr. Beard, who knew the cooking of every corner of our country, cooked in nearly every language. He lived abroad, traveled throughout Europe a number of times, saw most of the Western Hemisphere, and visited Hawaii and North Africa. His familiarity with exotic foreign foods spiced his extensive knowledge of American cooking at its best.

Mr. Beard was adviser to several large food companies, was food editor of Argosy magazine, and made many appearances on radio and television. His first three books are Hors d'Oeuvres and Canapes, Cook It Outdoors, and Fowl and Game Cookery. Equally at home in the kitchen of his own New York apartment and that of a hotel, James Beard brought the same sure touch to a half-hour supper as he did to the most elaborate buffet. He died in 1985.

Alice Provensen is the author and illustrator of Murphy in the City, A Day in the Life of Murphy, and Klondike Gold. She collaborated with her late husband, Martin, on many other highly acclaimed picture books, including the Caldecott Medal–winning The Glorious Flight and Nancy Willard’s Newbery Medal–winning A Visit to William Blake’s Inn, which was also a Caldecott Honor Book. The Provensens have been on the New York Times list of the Ten Best Illustrated Books eight times. Alice lives in California.

Mark Bittman is the author of Food Matters, How to Cook Everything and other cookbooks, and of the weekly New York Times column, The Minimalist. His work has appeared in countless newspapers and magazines, and he is a regular on the Today show. Mr. Bittman has hosted two public television series and has appeared in a third.

Beard's Beginnings

Okay, folks, the message here is clear and completely Beard. If you don't get it by now, starting at James' beginning may not help. The recipes are dated, yet some are so classic, we just need to be reminded how much fun tradition CAN be. However, if you don't get his theme - always use the freshest, highest quality in season ingredients to get outstanding results, don't waste your time and money on this nostalgic trip. If you admire the man, his message and your memories, get the book and just read it for the historical pleasure, but beware, his siren song is seductive and the techniques are too easy and clearly written to pass by without a try. Is this book necessary in your library? Perhaps not, but it IS fun, quite well-written and worth the perusal as an homage to a simpler time of entertaining in the earlier 1950's.

Great recipes, and nostaliga are dished up in this book

This cookbook is a reprint of a 1949 cook book may bring back memories for you. I like this book as it includes the original artwork from this time and this really brings a lot of charm to this book. This aside, you can take a glimse into what made James Beard a man to be praised. I like this book because there is a lot of extra information in this book.

As he discusses each ingredient he tells you different ideas and different styles for the same ingredient. I find this helpful is gathering new ideas for cooking. Now some recipes are definately no longer contemporary, but they are often tasty. This book is definately scratch cooking at its best. This book is worth picking up if you want to expand your cooking repitoire.

Still relevant today, and lots of fun, too!

I found this masterpiece in my local bookstore today and could not pass it up. The recipes look like lots of fun; the illustrations are lively, amusing, beguiling and perfect companions to James Beard's straight forward, down-to-earth presentation. The book itself, originally published in 1949, serves as a time-capsule full of insights into both yesterday and today's culinary worlds. As an added bonus, tonight I discovered that the book jacket is folded double and opens up into a large poster of farm/food/tidbits! I've never seen that before! The un-jacketed book looks lovely with artwork from the illustrators on the cover. This is a delightful, interesting, and absolutely useful book.

The romance between Steven and LaJoyce is the stuff of fairy tales. A handsome, alluring man captures the attention of a very attractive female. They are feeling each other and a whirlwind courtship leads to a beautiful, albeit hasty marriage. After the lavish honeymoon, the nightmare begins and does not end until Steven is dead. What Steven failed to share with LaJoyce is that he had AIDS. She finds out only after he enters the hospital with an unknown ailment - unknown to LaJoyce, that is. She holds on to her faith in God as she grapples with the reality of being deceived and despised by the man she loves as she unselfishly cares for him to the end.

Oftentimes God puts us through a test of faith just as He did Job. This is LaJoyce's test and she is truly tried in the fire. She remains true to God and stands firm on her faith in situations that would make a weaker person give up and walk away. I empathized with all she had to endure and admired her resolve. FAITH UNDER FIRE reads like a dramatic novel instead of the true memoir of a real person. Although LaJoyce is tried in the fire, she comes forth as pure gold.

Ms. Brookshire is a Woman of Strengthen

She did exactly what Jesus would have done. She stood by her lying, sick, selfish, dying, husband's side until death came and took him. In spite of everything she knew about him and his family. What a woman! What a strong WOMAN OF GOD! She is one of my Heroes. She has the faith of Job in the bible. She knew and she believed God was going to bring her through strong and better than ever. What a blessing in the end!

Incredibly Gripping

This book is something that I read in two days, and that was only because I didn't have enough time in the first night to finish it. The story is truly amazing and something that everybody should read for it tells many lessons about life and faith. It tells of how one woman led her very public life as a public relations director and her private torment as a devoted (though misled) wife! And through it all many of even her close friends didn't know! When she took her vow of "for better or worse" she meant it!! Simply written so that it accessible to all, it points out how she was so in love that she didn't see the signals that might have prevented her from getting into the situation. But her love pushed her forward and she stuck with a man who deceived her and mistreated her throughout, all because she had FAITH!!

Best Google book...ever

Among recent great books describing the business and impact of information technology, In the Plex is one of the best. As impactful as Pulse: The New Science of Harnessing Internet Buzz to Track Threats and Opportunities, and with story-telling as engaging as Idea Man: A Memoir by the Cofounder of Microsoft this book will be on the shortlist of 2011 "must reads" in the business of technology.

One of my favorite writers, Steven Levy of Wired, gained what may be unprecedented access to the employees and upper management of Google in order explore the history, the work environment key management decisions of one of the most innovative and culturally-influential companies of all time. Google manages this with 24,000 employees who see Google as the perfect employer for them. Levy describes Google as a place for the "unspeakably brainy", a kind of "geek never-never land" - just the right kind of environment to maximize innovativeness. Among the perks is the requirement for every engineer to spend a share of their time on personal projects. And as daunting as it sounds, Levy says Co-founder Larry Page actually still signs off on every single hire.

The co-founders Sergey Brin and Page literally started Google from a garage. (The name was a misspelling of the mathematical term for 10 to the 100th power - Googol. But the name stuck.) Their big idea: efficient searches and how to make money at it by selling keywords. Levy then leads us through Google's history of fantastic growth and innovation focusing mainly on big decisions in the firm. Among them the mistakes of handling the special case of China where media access is more controlled than Google would prefer and where management style of the China-based executives were more like a stodgy, old IBM than the free-thinking Google. The company with the motto "Don't be Evil", ultimately decided to leave the China market.

The rapid growth of the firm was itself a major challenge. That many smart people with the freedom and resources to chase many ideas could spread themselves thin. Some of the ideas could be technically possible because of the clever solutions Google staff would develop, but some ideas had other obstacles the engineering-oriented firm didn't anticipate. For example, Google's plan to scan in millions of books and offer them online ran into what should have been entirely foreseeable legal obstacles from authors. But as Levy describes in the first pages of the book, "To Google, it was a boon to civilization." It is this story that frames much of the rest of the book: visionary and cash-rich but somewhat naïve technologists struggle with practical realities of the rest of the world.

Some of the employee perks are drying up as economic hard times have even hit Google. The sheer size of the firm has required some amount of long-avoided bureaucracy and rapid acquisitions of firms the engineers thought were cool has slowed down. As Levy says, even the "Don't Be Evil" motto is now used as ironic humor by Google's detractors. But Google, with a $180+ billion dollar market capitalization is an example of a massive creation of wealth from one of a few areas where US exports lead the world: world-changing innovation.

Levy's telling of the Google story is based on access no other author had and, as a result, it is the best story about Google written to date.

Great at ancient history, not so great at current events

If you want a good history of Google's early years, this is the book for you. The author, a Google booster, had unparalleled access to current and former Google employees and presents more information about the history and development of the company than has reached print before. If you're interested in the causes of Google's recent stumbles, though, the author's hagiographic approach gets in the way of understanding. Here are a half dozen "evil" approaches from the "don't be evil" company that simply are not adequately explained.

(1) Google went into the China market and self-censored itself based on what it understood the Chinese autocrats wanted it to do. It didn't get out of China until the Chinese government launched a sophisticated hack that not only broke into and stole Google's top secret code, it stole the gmail contact lists of Chinese dissidents. Why didn't Google recognize the slippery slope of the rationalizations that allowed it to participate in this charade, especially co-founder Sergey Brin, who had escaped from a similar regime?

(2) Google was initially in favor of the positive public good of "net neutrality" when it was trying to break into the field, but suddenly it's no longer in favor of such neutrality for wireless. Why the about-face?

(3) In its book scan project Google initially took the legal position that what it was doing was fair use, and the author makes clear that the legal community thought it would win on this point. (p. 362). Yet ultimately Google bought into a suggestion from the Writers Guild of America that Google should become the designated internet bookstore for copyrighted books that are out of print and that it should create a registry to determine who should be paid for the books. Not coincidentally, Google would have profited handsomely by this arrangement. The only explanation the author proffers is that "it was a foregone conclusion that [co-founder] Larry Page would sign on.... It was his personal history and that of Google that determined that he embrace the scheme." (p. 362). This tautology is no explanation, and of course a federal judge has now rejected the settlement, a fact that occurred too late to get into this volume.

(4) On the Wi-Fi-street view project, again the author has no explanation as to why Google cars roaming the street sucked up all unprotected communications to and from the internet, other than "the engineers working on the Wi-Fi street view project noticed that someone had written useful code and implemented it." (p. 343). What?

(5) Google implemented a social networking application based on gmail that automatically gave everyone access to your entire email contacts list, and showed the frequency with which you communicated with each contact ("Buzz"). The $8 million privacy settlement that Google entered into a few months ago didn't make its way into this book. How could the "don't be evil" company be so tone deaf on privacy? Again, the author doesn't offer any clues.

(6) The most problematic issue has resulted from Google's purchase of internet ad king Double Click. After the purchase, without letting any of us know, it substituted its former privacy-conserving policy of keeping track of our web browsing only when we clicked through to one of Google's advertisers, to a new policy of keeping track of us every time we visit a web page that either has a connection to Doubleclick or contains Google ads, whether or not we click on the ad. All Google has to do to keep track of ALL of our individual web browsing is to match this up with the search data that it keeps for each of us for 9 months. What guarantee do we have that Google won't do that in the search for the type of profits it was looking for in China, in the book search project, and everywhere else? The author just doesn't say.

Hackers insight into Google

If you'd ask me, which technology journalist should write a book about Google, then Steven Levy would be high on my list. Steven's been around for a long time and wrote the excellent "Hackers" and the not so excellent "The Perfect Thing." He is able to write about technology in an engaging way, making "In the Plex" and insightful book about how Google works... and how it doesn't work.

The book is roughly organized around products (or projects). Since the book is about Google, it must start with the world of search and how Google was founded in Standford. How the two Googler founders were free-thinking Montessori idealists with an huge interest and background in technology stumbled on the idea of raking based on 'citations' and creating the world changing search -- google.com. It provides interesting stories about how advanced the Google search actually is and how it tried to learn from all the data it collects.

The second chapter takes Google from the start-up to a profitable company with Google Ads. The uncool product that became a cool product by changing the perspective from "boring ads" to an interesting technological problem. How to make ads useful? Introducing the auction, removing any middle-man and just do it based on data and algorithms was the trick Google used to ruin the existing markets of ads... or should I say, take it over. The Google Ads did lead to profit, which in turn lead to growth and...

To chapter 3 and an IPO. Google was funded based on VC money and they will expect to go public, so they can get their investment back. But Google didn't want to do that the traditional way... no... it had to be different. Nerdier, Googlier. They wanted to also disrupt the financial world, but that financial world didn't take Google too serious. It caused a lot of frustration, especially when Google stressed it's value of "Don't do Evil" which wasn't taken too serious by the (perhaps Evil) Wall Street firms. Eventually they succeeded, got lots of cash, so what do you do...

On to chapter 4 which starts with the invention of gmail and the need for more and more storage and computer power. This is the chapter where Google became really impressive as they changed the fiber and data centre world. Originally they ran in other company data centres, but eventually they figured they could do it better and build huge, secret data centres. Data centres need fast internet connections and power, so they actually bought most of the fiber connections, becoming one of the largest... cable companies.. I guess. They also made they move into power, but that is still undergoing. With the owning of the huge data centres, Google basically owned every aspect of their business and removed most dependencies. Now, they needed to show that they can do more than search/ads/mail, so...

Chapter 5 follows how Google tried different markets, first with Android and then with YouTube. As a company, being dependent on one market is risky, so expanding to others and increasing traffic and using your core assets (data centres) sounds logical. First into mobile making an operating systems (basically, together with Apple, killing Nokia), then a browser and becoming an active player in the 'second browser wars' and eventually buying YouTube to "go into video." These expanded Googles markets and made it less reliable on search only.

So, whats left? The rest of the world. Google began expanding in other countries from Chapter 6. The most interesting story is, of course, China where the corrupt government insists on stealing freedom from people by censoring the internet... a clear evil thing to do. So, do you play ball and try, from inside, to gradually open up the internet or do you refuse. Google went in... with a regret. The government considered it won and simply needed to push more and more rules otherwise it could simple remove the connectivity. Google shall listen. Google didn't like that and corrected its mistake after being hacked by the government. Painful. (The book doesn't share the wonderful details on how the government censorship simply makes google service look bad, missed opportunity, perhaps Steven needs to live in China for a while).

The US government is a lot better, right? Not really. It might be less corrupt, but it still is. Chapter 7 describes how some Googlers tried to help the Obama administration but were stifled by the bureaucracy. Also, competitors started lobbying more and more against Google, so they require Lobbyists too, which doesn't seem to be evil. The biggest legal problems came, of course, from the Google library project. Scanning all the world books is certainly evil, right?

Most of the book is exceptional positive about Google. The last chapter, Epilogue, suddenly changes its tone and shows how Google missed the boat on social networking, mostly because of how the company works. Also people became frustrated with Google, left, and started all kinds of wonderful companies such as Twitter, Foursquare, or left to join Facebook. Painful. Perhaps Google is now too big and traditional and will need to be replaced with a more modern company... facebook?

The book is structured (as you can read above) really well. It is well written and full with wonderful stories from Googlers. It is well research and was a pleasure to read. I'd recommend it to everyone who wants to have an insight into Google. It is probably better than some of the other Google-books. I'd rate if 4 stars, but not 5. Why? At times, I was disappointed with the technical inaccuracies in the book. Also, some points were left a bit too open. Last, it felt parts were missing, such as mentioning of the Google X projects or the Google Apps infrastructure. These seem like important new markets of Google, but it wasn't mentioned. So, an excellent book and definitively recommended, but not perfect.

Humanist Founding Father of French Canada

This is a biography of epic cultural and geographic sweep. It entwines itself into the histories of France, England and North America, illuminating by countless fascinating details while never losing the thread of its larger narrative.

The subject is Samuel de Champlain (~1570 to 1635), soldier, explorer, colonizer, diplomat and leader of men. In recounting the facts and deeds of Champlain's life, Fischer finds a theme in Champlain's humanism, in his strong Christian piety with very little ecclesiology and in his dream of la Nouvelle France as the place where men would grow beyond the wars of religion that devastated the France of Champlain's youth. The facts alone are gripping (Champlain made dozens of voyages to North America, was an intimate of two French kings, fought corporate board battles as well as hostile Mohawks, made a fortune, gave it away, founded the city of Montreal, explored and mapped much of what is now eastern Canada and New England, etc., etc.) and Fischer's thematic thread gives it a very inspirational cast without ever flinching from Champlain's errors and weaknesses.

Part of the book's charm is in its incidental illumination of other historical personages (Henri IV of France, for instance, and Cardinal Richelieu). Also delightful is the detail of its minor, surprising episodes; for instance, the account of Champlain's 1609 battle with Montagnais, Huron and Algonquin allies against Mohawk foes, clad in wooden armor and marching in close formation, or Champlain's use of siege engines against an Onandaga fortress in 1615.

Fischer's prose is lucid and never distracting. The book is profusely illustrated with maps, sketches, paintings and photographs that together give the reader a very strong sense of having been a witness.

Qui ne connaît pas Champlain? Son nom évoque pour la plupart le père de la Nouvelle-France, le fondateur de la ville de Québec et pour d'autres, un pont, un lac, un comté et pour les plus âgés une marque de bière. Mais qui est derrière ce personnage historique? Qui est cet homme?

C'est à cette question qu'entreprend de répondre le professeur David Hackett Fischer, historien américain et gagnant du prestigieux Pulitzer Price for History en 2005. Dans sa récente biographie "Champlain's Dream", l'auteur retrace l'itinéraire de l'homme qui marqua le cours de l'histoire en Amérique du Nord. Des millions d'hommes et de femmes d'origine française provenant de l'Acadie, du Québec, du Canada et des États-Unis lui doivent leur présence en terre d'Amérique. Mais ce livre fait surtout ressortir la personnalité de cet homme dans toute sa grandeur et dans toute sa complexité également. Fischer utilise admirablement bien la forme narrative, rendant son récit vivant et captivant. La description par exemple du célèbre affrontement de Champlain avec les Iroquois à Ticonderoga est tout simplement saisissante. De l'avis même de l'historien québécois Denis Vaugeois, il s'agit de la biographie la plus complète de ce grand personnage historique.

Champlain était au départ un militaire et un navigateur de premier ordre où il développa ses grandes qualités de chef et d'organisateur. Mais sa passion pour l'exploration l'emporta et le poussa à la découverte du nord de l'Amérique. Il parcourut de vastes étendues, représentant de nos jours l'équivalent de six provinces canadiennes et de cinq états américains. Ses qualités de cartographe lui permirent de laisser de nombreuses cartes fort précises et d'étonnantes illustrations qui font encore l'admiration des géographes. Fischer puise abondamment dans les nombreux livres et les milliers de pages où Champlain décrit ses expéditions, ses rencontres et ses nombreuses activités reliées à sa vie de découvreur et de fondateur. De nombreuses pages sont consacrées à l'observation de la faune, de la flore, de la qualité des sols et du climat, Champlain étant toujours à la recherche du meilleur endroit pour accueillir un nouvel établissement. Mais ce qui distingue surtout Champlain des autres entreprises de colonisation du Nouveau Monde, c'est son comportement à l'égard des peuples autochtones. Contrairement aux Espagnols qui ont asservi les indigènes et aux Anglais qui les ont chassés pour s'approprier leur territoire, Champlain s'approcha d'eux en ami, intéressé par leur culture et leurs habitudes de vie. Il cherchait à établir un lien de confiance et de respect permettant aux deux peuples de se côtoyer en paix et de s'associer ensemble à l'édification de la première colonie française, chacun y voyant son intérêt. Par son sens profond de l'humanité, ce gentilhomme sut s'allier les Montagnais, les Algonquins et les Hurons au bord du lac du même nom où il passa un hiver entier à vivre avec eux. Quant aux Iroquois, il sut les neutraliser pour une bonne période.

Champlain avait un sens profond de la dignité de l'homme, de tous les hommes, quelque soient leurs origines ou leurs croyances. Il rêvait de fonder un établissement en terre d'Amérique qui deviendrait rapidement autonome et peuplé de familles nombreuses qui sauraient s'y attacher pour y vivre en paix et prospérer. Il rejetait l'idée d'un comptoir ou d'un simple poste de traite, tel que le désiraient certains puissants intérêts en France. Malgré tous les déboires et les nombreux obstacles, Samuel de Champlain éprouva la satisfaction de voir à la fin de ses jours la Nouvelle-France prendre forme tel qu'il en avait rêvé.

Publiée en 2008, cette biographie de Samuel de Champlain par David Hackett Fischer mérite de figurer au palmarès des oeuvres offertes dans le cadre des fêtes du quatre centième anniversaire de la fondation de la ville de Québec, même si cet ouvrage n'existe pour le moment qu'en anglais.

The beginning of New France

This book reveals, in often excruciating detail, the various atrtempts of Samuel Champlain to establish a French colony in what is now Eastern Canada. He was certainly a determined man, and the vast majority of the success of this effort can be traced directly back to him. Overall the book is fairly well written, but it occasionally repeats facts from earlier pages, and it does tend to go overboard in a lot of its prose. There are very many places where the author recreates thoughts in the minds of the characters, and also supposes certain things happened for which there is no proof. It is a very good book to read if you are interested in the subject but I do feel that it could have been much shorter and still imparted the same essentail information.

Naturally aging for beauty and tranquility

Do you ever look at the skin of oriental women and wonder how they remain so beautiful as they age? Dr. Mao shares their secrets of everlasting beauty with us in this wonderful book. He tells us how to possess increased sexual energy and vitality, control appetite and weight, calm hot flashes, reduce wrinkles and spots, lift our moods and our faces, strengthen our bones, and improve our memory. And best of all, he tells us how to achieve this without drugs, hormone replacement, or invasive surgery.

One of my friends is on HRT (Hormone Replacement Therapy), which Dr. Mao tells us has been proven to increase our risk of breast cancer, heart disease, stroke, and blood clots after only four years. This friend is also at risk for breast cancer due to family history. Convincing her to stop this treatment is next to impossible. Her doctor recommended it; therefore she has to stay the course.

Hopefully, the rest of us will not be as stubborn. Every medicine has a side effect. For years I took theophylline for asthma, until I developed pre-hypertension and read about its major side effect . . . hypertension. I quit taking theophylline, changed doctors, and have only wheezed a couple times in eight years when afflicted with a cold.

We can make huge improvements in our health and beauty simply through lifestyle changes, diet, and mental outlook. Dr. Mao tells us step by step how to make these changes. Have a skin disorder? Here's an interesting Dr. Mao cure: Sun therapy can be used to treat acne, eczema, and psoriasis. By exposing the skin to 20 minutes of sun (15 minutes for the face) before 10 am and after 3 pm, we can see results in two to four weeks.

A Very Simple, Uncomplicated Book

Normally I make my husband, Steve, read books like this. Doesn't that sound horrible? Most of these types of books are tedious and I do want to live a healthier life. Since Steve does so well with mindless facts, I have him summarized the books and tell me what I need to do.

SECOND SPRING is nothing like that. The format or layout reminds me of those cool daily medication books. Each topic is only a page and in some cases, a page and a half long. Not only is it quickly and easy, but the information is interesting. I found myself able to retain the information also.

Although the book can be used for women of all ages, it does target the menopausal women and older. The book was inspired by the author's mother as he watched her going through her middle years. The book's techniques are to help women experiencing low energy and that menopausal brain fog. Dr. Mao's simple program uses natural techniques from traditional Chinese medicine to enhance not only energy, but health and sexuality.
